Scorpion soup

This is what scorpion soup apparently looks like. Scorpions are traditionally
eaten in Southern China, where they can be bought from local markets.

Maybe these are water-scorpions ,which are bugs (heteroptera) but not real scorpions.
You can find this (or nearly related ) species on nearly every continent of earth.
